A Quick Report from the Windy Knoll
It’s a busy time here at the Windy Knoll and kissin’ kin will be here over the week end. We appreciate their help — it has been discovered that we have termite damage around a door and we have to have a new door and storm door. Duh!! If you own a house there is forever and eternally something that needs to be done. With company on the way you could guess that cooking has to be done, too, and I don’t do fast foods. Today I’m baking a chocolate pound cake — have you tried coating the inside of the tube pan with 2 tbsps. of shortening mixed with 2 tbsps. of flour? Bush it on with a pastry brush — it’s a great help with sticking.
Tomorrow I’ll mix a squash casserole and John will make the meatloaf (he can make a mean, too). We’ll have this ready for the oven on Saturday. Mexican cornbread would be nice to have with this, also — um, wonder if can get it all done. I always have to have turnip greens when these folks come, but that’s already cooked and in the freezer. This with green beans and devilled eggs should make a decent meal. Oh well!! Maybe frozen peaches to go along with the chocolate cake for desert.
We’ve been busy this week repotting a number of large plants that winter over in the basement and that’s a job for two old codgers. There are so many things that need doing here and when I’m still in bed in the mornings I can lie there and plan the day — getting lots of things accomplished. Whoa, Nellie!! That lasts through breakfast and by then I’m changing the plans.
Busy, busy goes right along with country living.
