A Windy Knoll Report
Every day here at the Windy Knoll has its own agenda and usually spells “work.” One would think that two octogenarians would do very little except needlework and/or read and piddle. Wrong!! If you remember, John dug our sweet potatoes the first of October and we were so disappointed. We thought we were getting a red potato when we got the plants last spring, but they turned out to be something else — very pale in color. I said they looked as though they had fainted. We hate this kind and when John shopped for his quart of honey he found the lady had red sweet potatoes — we don’t know the variety. Needless to say, we’ve invested in a box of potatoes. The freezers are (were) full and running over, but we’ve thrown away and sent home with a daughter enough to make some room. So now we’re in the process of baking and freezing pretty red potatoes.
They will be so good next winter to lift them out, zap them in the microwave, add a little cut of butter and enjoy. Not only will we bake potatoes, there will be some we have to store for other uses and that will take place in the basement.
Then you wouldn’t believe it, but today a man came laden with muscadines — lots of muscadines. Now we are in the process of washing, draining and freezing these in single layers. This way they won’t freeze together and we can take them out of the freezer and eat them much like eating popcorn.
Add all these jobs to the regular cooking, laundry and maybe a little cleaning and “there’s no rest for the weary and the wicked want none.” I’ve told you this before and I may be guilty of saying it again. Whew!!! I need to set a spell and contemplate. How about this for country living?
